Peppermint oil's flavor primarily comes from volatile aromatic oils extracted from the mint plant (Mentha). It's typically extracted by steam distillation from fresh or semi-dried mint stems and leaves, resulting in a colorless or pale yellow transparent liquid.

Main Components: Peppermint oil's primary components are levomenthol, levomenthone, isomenthone, and pulegone. Menthol, a high concentration, is the primary component responsible for its cooling properties. Other components include decyl acetate, menthyl acetate, methyl benzoate, and α- and β-pinene.

Flavor Characteristics: It has a strong and distinctive minty aroma that is refreshing and highly diffusible, quickly stimulating the sense of smell. The taste is initially pungent, followed by a lingering cooling sensation. This cooling sensation is not due to low temperatures, but rather stimulates the cold receptors in the oral mucosa.
